Did you know that the quince is considered a citrus fruit but belongs to the ROSE family? Once you taste this marmalade, you’ll get it. This fruit can NOT be eaten raw. It is hard, starchy and bitter but once you add a little heat and sugar, it becomes quite magical. Quince are full of natural pectin so this easy recipe needs only 3 ingredients. You will need…
5/6 Quince
4 cups water
2.5 cups sugar
1 Vanilla Bean (optional)
Step 1. Scrub quince clean. Make sure to remove all of the soft brown fuzz that might be there. Core fruit like you would an apple or pear.
Step 2. Grate quince, skin and all. I used a food processor because this can be a lot of work on a hand grater.
Step 3. Add grated quince and water to a large pot. Bring to a boil.
Step 4. Add sugar and vanilla bean. Cook on medium heat for about an hour. Check on marmalade and stir every 15min or so. Its getting close to done when the Quince start to turn a pretty rosy pink color and most of the water has been absorbed.
Step 5. Allow marmalade to cool for easy handling then divide into jars. Store in the refrigerator.
